MEASUREMENTS & CONVERSIONS:

Real chefs mesaure out their solid ingredients according to weight NOT volume. For example, take cut up strawberries - 1 cup of cut strawberries and 8 oz of cut strawberries may not equal the same amount (depends on how they're cut, how big they were to start with, etc). Another great example is the misconception that 8 oz of flour would equal 1 cup; however 1 cup of flour actually only weighs 4.5 ounces!

When a recipe ingredient is expressed in weight, weigh it out, likewise, you should always measure out any ingredient expressed in volume. There are, of course, a few exceptions to this rule: the weight and volume of water, butter, eggs and milk are the same, so you can measure these ingredients out however is most convenient.

This page will help you understand some of the basic conversions that real chefs use EVERY day!

VOLUME:
Refers to the space occupied by a substance. Height x Width x Length.

Converting Ounces:
As you can see in the conversions for Volume listed above, 1 fluid ounce = 29.57 milliliters. So, to convert fluid ounces to milliters, multiply the number of ounces by 29 (rounded for convenience):

8 fl. oz. x 29 = 232 ml Therefore: 224 ml / 29 = 7.72 fl. oz.

WEIGHT:
Refers to the mass or heaviness of a substance. Most chefs use portion or balance scales to measure out these ingredients.

1 Pound = 16 Ounces = 454 Grams
1 Ounce = 28.35 Grams = 0.0625 Pounds
1 Gram = 0.035 Ounces (1/30 oz.)
1 Kilogram = 1,000 Grams = 35.27 Ounces = 2.2 Pounds
1 large egg white = 1 ounce (average)

Converting Grams:
As you can see from the weight conversions above, 1 oz = 28.35 grams.Multiply number of grams by 28 (rounded for convenience):

8 oz. x 28 = 224 g Therefore: 224 g / 28 = 8 oz.

COUNT:
Refers to the number of individual items - used in recipes, portion control and in purchasing.

When used in purchasing, it indicates the size of the individual items.
For example: a "96 count" of lemons would mean that a 40-pound case countains 96 individual lemons and if you were to increase the count, to say, a "115-count case" it would mean the size of the lemon decreased so that more would fit in the same 40 pound case.

TEMPERATURE:
1 degree Celsius = 33.8 degrees Fahrenheit

0 degrees Celsius = 32 degrees Fahrenheit (freezing point of water)
100 degrees Celsius = 212 degrees Fahrenheit (boiling point of water)
